Abstract

Fluid flow at the micro- and nanoscale exhibits unique phenomena that can be used to create components suitable for conducting biological studies. This chapter provides an overview of the current state-of-the-art microfluidic technology applications in food and nutrition. The chapter also presents studies on the nano-encapsulation of antimicrobial and antioxidant essential oils (EOs) and their compounds, the detection of foodborne pathogens and nutritional biomarkers, and the assessment of nutritional biomarkers for detecting and quantifying macro- and micronutrients. This technology has great potential for developing and commercial
ising low-cost, low-volume, and easy-to-use point-of-care (POC) testing devices with commercial benefits for the public health and food safety sector, promoting human health and wellbeing.
